2 ingredientsWhen I first saw this extremely easy recipe last year, I couldn’t believe my eyes -two ingredients? No eggs, no oil, no water. These are so easy for a child to mix up and help make, so try them soon.                               PUMPKIN COOKIES (preheat oven to 350)

1 -Box Spice Cake Mix

1 -15 ounce can Pumpkin

Directions: Mix with a fork or spoon until most lumps are gone. Drop by rounded tablespoonfuls onto a greased cookie sheet. Dampen fingers lightly to flatten some. Bake at 350 for 18-20 minutes, depending on size of cookie. I ice them with cream cheese icing and top with walnuts, but they are great plain. You can add other optional ingredients to the batter, like chocolate chips, cranberries, raisin, or nuts. Yields 36-40 cookies.2 ingredient pumpkin cookies

  2. Wouldn’t they cost less if you make them from scratch?

    • Hi, Maybe, depending where you shop. I spent $1.00 on the cake mix and .89 on the pumpkin. We just went through a double batch -shared and ate them all! 🙂
