Kid-friendly Recipe to Try This Weekend

Easy Tamale Pie -One of Lilly’s Favorite Recipes 

This recipe is so easy for kids to help make. It’s basically mixing together opened cans of ingredients and stirring in taco meat. A lovely top layer of heavenly browned cornbread makes this a stand-out  for a fast  and easy meal.  6-8 servings     (9×13″pan) Preheat oven to 325.

1-pound ground turkey or beef, cooked with one pkg. taco seasoning. Drain any grease.

1 can whole kernel corn in liquid

1 can diced tomatoes in liquid or same amount of salsa -your choice

Optional: 1 can rinsed and drained black beans. (We don’t use beans.)

You can adjust any amounts of the corn, tomatoes and beans to suit your family’s tastes.

Put all these together in the 9×13 pan and cook at 325 degrees until hot and bubbly, (about 20-30) minutes. Remove from oven and pour corn bread *topping mixture over top and cook until browned, (about 20 minutes). Serve with Shredded Cheddar cheese, and sour cream, olives -whatever you like.

*TOPPING: (1) Box Jiffy corn mix, made with 3/4 cup of milk and one egg. Mix this up while the Tamale Pie is baking.

    I make mine with two cans of corn, one being creamed corn. I also add my black olives into the recipe before cooking. I place a layer of Mexican shredded cheese on top of all the ingredients then put my cornbread mix over that.
    Everyone should try tamale pie, easy to make and yummy!

    I love this recipe, it’s real easy and you can add any kind of topping you want {cheese, salsa, avocado, hot sauce} for an extra kick.
